Lemon thyme grows as a perennial in InVine's Tallahassee garden and is among our most reliable year-round herbs. We harvest just before flowering — the moment when thymol and carvacrol reach their peak — then dry the stems and leaves before beginning an eight-week slow infusion in cold-extracted organic oils. Florida's warm winters allow it to stay productive when most Mediterranean herbs slow down.

Why We Use It

I added lemon thyme to Breathe Free because it bridges two different parts of the formula. The thymol content gives it a distinctive herbal depth — this is not just an aromatic herb, it brings real character to the blend. And the lemon character connects back to the lemon balm's calming nature, creating continuity through the formula.
